- Cold egg-yolk emulsion: mayonnaise and some dressings use yolk and often mustard to help disperse oil in a water-based phase. If the oil was added too quickly, rebuilding slowly can work.

Work only with a recipe made from pasteurized egg when the mayonnaise will not be thoroughly cooked. If the mayonnaise is fresh, safely handled, and broke because oil was added too quickly, move to a clean bowl and establish a small new water-based starting phase.
Escoffier's published repair puts about 1/2 teaspoon of very hot water in a fresh bowl, begins whisking with the whisk that still carries a little egg-and-oil mixture, then adds the broken mayonnaise back a drop at a time while whisking. As the emulsion takes hold, the addition can remain slow and controlled.
The small amount is source-specific, not a ratio to scale casually. If you are working from another tested recipe, use its repair method. Do not pour the entire broken batch into the new bowl at once; that repeats the overload that may have caused the failure.
If the mixture smells wrong, contains unpasteurized raw egg, was held unsafely, or shows contamination, do not repair it. Discard it. A smooth texture does not make unsafe egg safe.

How do you repair a butter-finished pan sauce?
